The pressing technique is generally the oldest technique used in seeping out the liquid phase in a material consisting of solid and liquid phases and can also be defined as filtration under pressure. The basis of this technique is formed by the seeping of the oil in the raw material out of the seed under pressure. Considered from the point of view of production technique, after the foreign substances inside the oilseed raw material are cleaned, the pressing process takes place in presses without being exposed to high degrees of heat. Afterwards the oils are made ready for sale by carrying out a simple filtering process. Oils obtained with the cold press technique come to the fore in terms of nutritional value because they are not exposed to high-degree heat treatment during the process (40–50 °C), no solvent is used while extracting the oil from the raw material, and they contain in higher proportions some substances such as natural antioxidants, phosphatides, cerebrosides, carotenoids and phytosterols which are partly removed from the oil during the refining stages in conventional oil production.
