In Aronia fruits, anthocyanins represent the second largest group of phenolic compounds, with concentrations varying between 0.60% and 2.00% of the dry weight (Kokotkiewicz et al., 2010). The presence of anthocyanins is one of the most important factors determining the plant's antioxidant capacity. Thanks to its high anthocyanin content, Aronia exhibits a higher antioxidant capacity compared to many other plants. Aronia fruits are referred to as functional foods due to their rich chemical composition and high antioxidant activity [1].
Aronia causes a noticeably astringent sensation in the mouth (tactile, drying, and tightening effect). This astringent effect is due to the condensed tannins contained within it [1].
The fruits of the plant are not only consumed as a nutritious food but also used as traditional herbal medicine. Aronia berries are primarily used in Russia and some Eastern European countries for their blood pressure-lowering and anti-atherosclerotic effects [1].
Aronia berries have a high content of phenols, dietary fiber, organic acids, sugars, fats, proteins, minerals (especially zinc and potassium), and vitamins (vitamin C) [1]. They contain relatively high amounts of K and Zn and varying amounts of Na, Ca, Mg, and Fe.
